DESCRIPTION:

Sooooooo yummy! Sweet Potato rostis with a runny egg over the top is a marriage made in heaven. Add in some sautéed mushroom, a good hit of protein from chicken breast, with the smokiness of beetroot and delicate tender stem broccoli  and you have a meal that tastes better than any ‘naughty’ processed foods you can think of. Oh, and having eggs for dinner is such a treat.

You can take off 412 calories if you reduce to one rosti and one chicken breast.

INGREDIENTS:

  • 2x Rostis –
    • Sweet Potato – 310g
    • Egg Yoke – 1x
    • Rice Bran Oil – teaspoon
    • Chip mixed Seasoning to bind and flavour
  • Chicken Breast – 300g / 2x (cooked in teaspoon of Coconut Oil)
  • Eggs – 2x (cooked in 6g Butter)
  • Mushrooms – 6x
  • Tenderstem Broccoli – 105g
  • Sweet & smoky shredded Beetroot – 40g

HEALTH BENEFITS:

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Beetroot and Broccoli are great prebiotics, meaning they are food for the good bacteria in your gut, plus because of the fibre content they help with good bowel movement, feeling full and not all their calories are absorbed. Chicken and Eggs are great source of protein, with eggs providing a nice hit of good cholesterol that helps with hormone production and cell energy.
