DESCRIPTION:

This is right up my alley. Chicken Skewers with Mushrooms, Shallots and Red Peppers are tasty and fulfilling. But, you need more flavour to to really feel satisfied, and that’s where the crunchy Sweet Potato Fries and Hummus come in. Now this Dinner plate is popping! Throw in some Tender Stem Broccoli to balance those flavours whilst bringing some fibre and water content, and you have meal that ticks all the health and taste boxes.

You can lower this plate down to by 288 calories by dropping the Chicken down to 218g, Sweet Potato Fries to 150g and have only 2 tablespoons of Hummus.

INGREDIENTS:

  • Organic Chicken Breast – 380g
  • Coconut Oil – 1x teaspoon
  • Closed Cup Mushrooms – 6x medium
  • Shallots – 2x
  • Red Pepper – ½ medium
  • Tender Stem Broccoli – 70g
  • Hummus – 3x tablespoons
  • Sweet Potato Fries – 175g

HEALTH BENEFITS:

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Chicken offer great sources of healthy lean protein. Then you have the indigestible fibre and prebiotic benefits for your guts microbiome, that come with Mushrooms, Shallots and Broccoli. Broccoli also brings a good hit of vitamin K, vitamin C, folate (folic acid) and potassium. Moreover, normal White Mushrooms are being touted as nature’s nutritional supplement as they are loaded with the nutrients our bodies need to generate energy and repair cells — including digestive enzymes, a spectrum of B vitamins, protein, and vitamin D2. Lastly, Hummus contains Chickpeas and Sesame Seeds, that combined provide you with protein and fibre, and are high in iron, folate, phosphorus, B vitamins, magnesium and contain cholesterol-lowering phytosterols.
