Oooh, these Sweet Potato Wedges baked in the oven with a dash of Rice Bran Oil and chip mixed seasoning are easy yet so so tasty! Combine that with some chicken, a fresh tossed salad and a little sauerkraut and you have a plate packed full of whole food flavour whilst keeping the calories in check. A great option for lunch, post-workout or even dinner.
- Garlic & herb Chicken Breast (birdseye) – 2x fillet
- Sweet Potato – 310g
- Rice bran oil – teaspoon
- Extra virgin Olive Oil – teaspoon
- Leafy butterhead salad mix – 25g
- Cucumber – 30g
- Shredded Beetroot – 30g
- Shredded Carrot – 20g
- Baby Tomatoes – 4x
- Sauerkraut – 3 tablespoons
- Chives – season to taste
Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Chicken offer great sources of healthy protein. Beetroot has superfood status and Sauerkraut is one of the best prebiotics combined with being probiotic due to the fermentation process.
