DESCRIPTION:

I’ll say it again, these Sweet Potato Wedges baked in the oven with a dash of Rice Bran Oil and chip mixed seasoning are easy yet so so tasty! Combine that with some chicken, a fresh tossed salad and a couple tablespoons of Hummus and you have a plate packed full of whole food flavour. A great option for lunch, post-workout or even dinner.

Reduce to a 250g Sweet Potato and one Chicken fillet and save 295 calories from the above.

INGREDIENTS:

  • Garlic & herb Chicken Breast (birdseye) – 2x fillet
  • Sweet Potato – 420g
  • Rice bran oil – 1x teaspoon
  • Extra virgin Olive Oil – 1x teaspoon
  • Leafy butterhead salad mix – 25g
  • Cucumber – 30g
  • Cherry Tomatoes – 4x
  • Shredded Beetroot – 30g
  • Shredded Carrot – 20g
  • Hummus – 3x tablespoon
  • Chives & Chip Mixed Seasoning – season to taste

HEALTH BENEFITS:

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Chicken offer great sources of healthy protein. Beetroot has superfood status. The Chickpeas in Hummus provide you with protein and fiber, and are high in iron, folate, phosphorus and B vitamins.
