When/Why

I know it’s bitter cold right now, but having such a summery fresh salad with warm cooked food is a delight – like a ray of sunshine breaking through the blizzards we’re experiencing right now in the UK. Such a great combo of crispy spicy Sweet Potato against the yumminess of Avocado. Throw in the sweet sharpness of the pomegranate and the satisfying nature of chicken and you will be content AND feeling healthy, without the lunchtime carb crash that often happens in the colder months. This has a brilliant macro ratio for a post workout meal too. Save 196 calories if needed by reducing to one Chicken fillet and 200g of Sweet Potato.

  • Original Chargrill Chicken Fillets – 2x
  • Organic Coconut Oil Cooking Spray – 20x Sprays
  • Sweet Potato – 260g
  • Avocado – 1x small fruit
  • Leafy butterhead salad mix – 25g
  • Cucumber – 30g
  • Pomegranate – 10g
  • Extra virgin Olive Oil – teaspoon
  • To Flavour Sweet Potato – Sriracha Seasoning, Sea Salt & Black Pepper

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Chicken offer great sources of healthy lean protein. Pomegranate is effective against heart disease, high blood pressure, inflammation and some cancers, including prostate cancer – and is a source of fibre, vitamins A, C and E, iron and other antioxidants (notably tannins). Avocado is considered to be a super food and one of the only fruits promoted to be eaten daily due to its healthy fats.
