Yuh-Mee! If you haven’t tried these flavour combinations, you must. Loaded Sweet Potato skins with Soft Goats Cheese and Chives is delicious. Full of punch. Layer in the sweet and smoky flavour of the Sweetfire Beetroot and a fresh summery salad, and you need not ever consider a ‘bro’ chicken dinner as bland and repetitive. I have chicken 3-4 times a week for dinner, and it’s never the same. The key is to bring different veggies, herbs, spices and cheeses to the mix to create unlimited flavour combos.

If you’re looking for a lower calorie options, take this down to one Chicken Breast, 200g of Sweet Potato, 20g of Goats Cheese and remove the sprinkle of pine nuts. In doing so, save 425 calories.

  • Organic Chicken Breast – 300g / 2x breasts
  • Coconut Oil – 1x teaspoon
  • Sweet Potato – 370g
  • Soft Goats Cheese – 40g
  • Chives – 2x teaspoons
  • Sweet & Smoky Shredded Beetroot – 70g
  • Leafy Butterhead Salad – 23g
  • Cucumber – 30g
  • Cherry Tomatoes – 4x
  • Extra Virgin Olive Oil – 1x teaspoon
  • Pine Nuts – 1x tablespoon

HEALTH BENEFITS:

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Chicken offer great sources of healthy lean protein. Beetroot is a good source of iron, nitrates, betaine, magnesium and other antioxidants, in addition to helping lower blood pressure and boost exercise performance. Goats do not contain a certain mutation in the milk that most cows do, making their milk and cheese much more digestion friendly. Pine Nuts provide a great source of Omega 3, Selenium, Iron, Zinc and Magnesium. And lastly, a light summer salad of course brings volume without much calories at all, as well as nutrients and great water content.
