What can I say. Hungry? Salivating yet? 97% pork Sausages, with a Hummus filled buttery Sweet Potato, sautéed mushrooms and tasty madly of Leek and Broccoli. Delicious. A great dinner, without the carb coma that comes from heavy white potato or pasta. Flavour combination works perfectly, and offers a nice balanced meal in terms of macros.

It is big plate, but it’s easily reduced by dropping down to two sausages and and a 250g Sweet Potato – saving you 525 calories. Who needs packed food, when you have this taste explosion?..

INGREDIENTS:

  • 97% Pork Sausages – 4x link (M&S)
  • Sweet Potato – 400g
  • Butter – 10g
  • Leeks – 100g
  • Broccoli – 65g
  • Mushrooms – 6x medium
  • Hummus – 3x tablespoons
  • To flavour – Paprika, Salt & Pepper

Benefits:

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Then you have the indigestible fibre and prebiotic benefits for your guts microbiome (i.e. feeding the beneficial bacteria), that come with mushrooms, Leeks and broccoli. Broccoli also brings a good hit of vitamin K, vitamin C, folate (folic acid) and potassium. Pork is high in protein and essential vitamins, minerals and amino acid good for overall health. Lean pork, when trimmed of visible fat, is nutrient-dense, satisfying, and good for you.
