This is one hell of a refined yet indulgent Omelette. So tasty. This is a perfect light lunch, as it brings a balanced serving of Protein and Healthy Fats combined with a healthy light salad, and all for only 525 calories. For those that are on Keto diets, or are generally trying to go low carb, this hits the spot perfectly. You don’t even miss the absence of bread on the plate. This omelette has no cheese and no raw tomatoes – two staple ingredients of my previous Omelettes. Honestly, there is plenty of flavour here to need them. I do my best to limit both, as lactose is inflammatory and tomatoes can play havoc in terms of gas and bloat for some people.
- Free Range Eggs – 3x
- Butter – 10g
- Fiery Chilli Pesto (Sacla) – 2x teaspoons
- Prosciutto Di Parma Ham – 2x slices
- Chestnut Mushrooms – 2x
- Diced Onions – 2x tablespoons
- Butterhead Lef Salad Mix Bag – 23g
- Cucumber – 30g
- Shredded Beetroot – 30g
- Shredded Carrot – 1x medium
- Extra Virgin Olive Oil – 1x teaspoon
- To Flavour – Sea Salt, Black Pepper, Paprika
Eggs are great source of protein and should be a staple for most active people, with egg yolk providing a nice hit of good cholesterol that helps with hormone production and cell energy. You get a light portion of indigestible fibre and prebiotic benefits for your guts’ microbiome (i.e. feeding the beneficial bacteria), that come with Mushrooms and Onions. Carrots are a rich source of Beta carotene – a powerful antioxidant that can also be converted into vitamin A in the body to help maintain healthy skin. Beetroot is a good source of iron, nitrates, betaine, magnesium and other antioxidants, in addition to helping lower blood pressure and boost exercise performance. White/Chestnut Mushrooms are being touted as nature’s nutritional supplement as they are loaded with the nutrients our bodies need to generate energy and repair cells — including digestive enzymes, a spectrum of B vitamins, protein, and vitamin D2.
