DESCRIPTION:

This is so incredibly tasty, whilst being great for you! The richness of the melted goats cheese and pesto is a taste explosion. Then you have the sweet and smokiness of the Beetroot over the buttery Sweet Potato which brings a sweet yet sharp contrast in your mouth. Combine that with the mild onion-like flavour of leeks and the fresh bit of the tender stem broccoli, and you have yourself a winner here. As you’ve noticed, I eat a lot, and the combination of the high fats and the large portion of Chicken and Sweet Potato on this plate will need to be dialled down for most.

Drop the Sweet Potato down to 250g with 10g of Butter and halve the chicken, pesto and goats cheese and save 558 calories.

INGREDIENTS:

  • Organic Chicken Breast – 300g / 2x breasts
  • Extra Virgin Coconut Oil – 1x teaspoon
  • Soft Goats Cheese – 60g
  • Gluten-free Original Pesto – 32g / 4x teaspoons
  • Sweet Potato – 425g
  • Butter – 15g
  • Leek – 100g
  • Tenderstem Broccoli – 90g
  • Sweet & Smoky Shredded Beetroot – 50g

Benefits:

Chicken offers great sources of healthy lean protein, whilst Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Then you have the indigestible fibre and prebiotic benefits for your guts microbiome (i.e. feeding the beneficial bacteria), that come with carrots and Leeks, Beetroot & Broccoli. Broccoli brings a good hit of vitamin K, vitamin C, folate (folic acid) and potassium. Beetroot also is a good source of iron, nitrates, betaine, magnesium and other antioxidants, in addition to helping lower blood pressure and boost exercise performance.
