Guess what – we’re using Sweet Potato again! Something new here though. An incredibly satisfying and tasty Cottage Pie, with the twist of using Sweet Potato versus number White Potato makes for even greater enjoyment in my opinion. Rich homemade tomato-based gravy with Mushrooms, Onions and Garlic smoothers the lean mince and balances well with the Sweet Potato mash. Throwing in some buttery firm Brussel Sprouts and and Tender stem Broccoli gives you a contrasting bite to the plate, that would be otherwise missing. This is a huge portion, even by my standards. I would recommend halving the Cottage Pie ingredients and saving yourself 456 calories. That’s half of the Sweet Potato, Mince, Mushrooms, Gravy and Chopped Tomatoes.

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Lean beef is a great source of protein and creatine, both very supportive to having developing and maintaining a lean physique. Then you have the indigestible fibre and prebiotic benefits for your guts microbiome, that come with Mushrooms, Garlic, Onion, Broccoli and Brussel Sprouts. Broccoli & Brussel Sprouts also bring a good hit of vitamin K, vitamin C, folate (folic acid), potassium, manganese and many other nutrients. Moreover, normal White/Chestnut Mushrooms are being touted as nature’s nutritional supplement as they are loaded with the nutrients our bodies need to generate energy and repair cells — including digestive enzymes, a spectrum of B vitamins, protein, and vitamin D2.
