When/Why

A perfect light lunch that transports you into Spring and Summer all year round. The combination of Apple with Brie, Balsamic Vinegar and Pine Nuts on a bed of Butterhead Lettuce is so light and fresh, whilst packing in flavour and satisfaction. Combine that with the hearty substance of a butter Sweet Potato Jacket and some Chicken and you have a complete lunch that will not leave longing for something else – a common feeling after having a lunch salad. Portion size is pretty small as is, but should you need or want to go lower, drop the Sweet Potato to 150g and have only one Chicken Breast fillet and save 205 calories.

  • Original Chargrill Chicken (Birdseye) – 2x oven fillets
  • Sweet Potato – 220g
  • Grass-fed Butter – 5g

Benefits

Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Chicken offer great sources of healthy lean protein. Beetroot is a good source of iron, nitrates, betaine, magnesium and other antioxidants, in addition to helping lower blood pressure and boost exercise performance. Carrots are a rich source of Beta carotene – a powerful antioxidant, which, among other vital uses, can be converted into vitamin A in the body to help maintain healthy skin. Apples are high in fibre, which is great a healthy digestive system, plus they are rich in antioxidants, Vitamin A, Vitamin C, Vitamin K and Vitamin B7, which when combined help protect our cells from free radical damage, support our immune system and breaking down fat. Pine Nuts contain PUFAs [polyunsaturated fatty acids] that suppress appetite, whilst containing nutrients that help boost energy, including monounsaturated fat, protein and iron. Pine nuts are also a good source of magnesium, low levels of which can lead to fatigue.
