When/Why

Mmmm…. honey and mustard Chicken! Great thing with this meals that you pack in a lot of volume and loads of flavour, but it’s surprisingly low in calories for what you get. Perfect feel-good dinner after a long day. Delivers on a sizeable portion of protein and carbs, whilst keeping fat low. Moreover, you’re really doing yourself a favour with this meal, due to the gut healthy properties that come from all the veggies – see below. Drop the New Potatoes down to 200g, Chicken down to 150g, and halve the honey/mustard and the plate drops by 350 calories.

What

  • Chicken Breast – 300g
  • Honey – 4x teaspoons
  • Wholegrain Mustard – 20g
  • Rice Bran Oil – 1x teaspoon
  • New Potatoes – 370g
  • Grass-fed Butter – 10g
  • Chives – sprinkle
  • Leek – 100g
  • Carrots – 1x medium
  • Mushrooms – 6x medium

Benefits

Chicken offer great sources of healthy lean protein. You get a good portion of indigestible fibre and prebiotic benefits for your guts’ microbiome (i.e. feeding the beneficial bacteria), that come with Mushrooms and Leeks. Then you have Carrots,  that are a rich source of Beta carotene – a powerful antioxidant, which, among other vital uses, can be converted into vitamin A in the body to help maintain healthy skin.
