DESCRIPTION:

Ultimate creativity with a Sweet Potato here! A Sag Aloo is a popular Indian cuisine side dish, but here we made it centre stage, by using a big portion of Sweet Potato, Spinach and adding in soft Goats Cheese. Combine that with salmon fillets, Mushrooms and Tenderstem Broccoli and you have such a satisfying meal full of flavour explosions and character.

You can reduce the calories by 451 if you drop the Sweet Potato down to 250g, halve the butter and have a single salmon fillet.

INGREDIENTS:

  • Wild-caught Salmon – 2x (without skin) / 200g
  • Sweet Potato – 400g
  • Grass-fed Butter – 15g
  • Spinach – 100g
  • Garlic – 1x clove
  • Soft Goats Cheese – 50g
  • Tenderstem Broccoli- 80g
  • Season and flavourings – Cinnamon, Cumin, Salt and Pepper

Salmon is a great source of protein, that is rich in Omega-3 Fatty Acids (great for the brain), high in Vitamin B, good source of potassium and loaded in Selenium. All combined give a host of benefits ranging from cardiovascular, improved mood and cognition, Joint protection and eye benefits. Sweet Potato offers a nice hit of vitamin A, C, Copper, K & B6, plus has a lower blood sugar response than white potato. Then you have the indigestible fibre and prebiotic benefits for your guts microbiome (i.e. feeding the beneficial bacteria), that come with Garlic, Broccoli and Spinach. Broccoli also brings a good hit of vitamin K, vitamin C, folate (folic acid) and potassium, and Spinach is great source of dietary iron.
