Chicken & Avocado Salad with Sweet Chilli Rice

When/Why:

Great for lunch or a post-workout meal as you get a good protein/carb ration and it’s nice and easy to prepare. Combinations of Sweet Chilli & Lime Rice with Chicken, Avocado, Salad and Sheep’s Yoghurt work great together. You can reduce by 303 calories by taking it down to 125g of rice (half a packet) and just one chicken fillet.

 

What:

  • Chargrill Chicken from Birdseye – 2x fillets
  • Sweet Chilli and Line Rice by Tilda – 250g (packet)
  • Avocado – 1x small
  • Organic Sheep Milk Yoghurt – 30g (tablespoon)
  • Leafy Butterhead Salad – 25g
  • Shredded Beetroot – 30g
  • Cucumber – 30g
  • Grated Carrot – 1x carrot

Benefits:

Chicken offer great sources of healthy protein. Avocado is considered to be a super food and one of the only fruits promoted to be eaten daily due to its healthy fats. Beetroot is a prebiotic for the micrbiome — augmenting the growth of beneficial bacteria for a healthy gut, and is a good source of iron, nitrates, betaine, magnesium and other antioxidants, in addition to helping lower blood pressure and boost exercise performance. White rice has minimal lectins (the defensive proteins in the hull and seeds of plants to prevent being eaten), which means it’s a gentle carb for sensitive guts.
